The best origin stories begin with fish tacos. As a young man, Ralph Rubio went on a spring break trip to San Felipe, Mexico and came home with a fish taco. It wasn’t long before he opened a little walk-up Rubio’s taco stand in Mission Bay, San Diego in 1983. 270 million fish tacos later, we’re still serving up fresh, delicious Baja-inspired food that celebrates our Mexican, coastal roots.

“NO-FRIED” PINTO BEANS™

In case the name didn’t give it away, we don’t fry or re-fry our beans. They get their fresh flavor from a blend of seasonings, slow cooking, and the fact that they’re made from scratch in our kitchens every day.

GUACAMOLE SMASHED DAILY

It’s got to be smashed by hand every day with rich, creamy, buttery Hass avocados—and just the right amount of fresh-squeezed lime juice, for it to be considered Rubio’s guacamole.

MEXICAN RICE

Light, fresh, the perfect complement to anything on our menu. Our Mexican Rice is still made using the recipe Ralph Rubio’s mom created back in the day. Lightly toasted, and cooked with tomatoes, garlic, and secret spices.

SALSA PICANTE

We take the finest chiles de arbol, toast them until they’re charred just enough to give them that unmistakable smoky taste, then blend in sea salt and tomato so it’s a little thick, with just enough kick.

AUTHENTIC TORTILLAS

The humble tortilla is the unsung hero of many of our most popular dishes. Made with natural, stone-ground corn, salt, and lime. The way authentic tortillas have been made for generations.

Sourced from the icy ocean waters of Alaska, our Wild Alaska Pollock is certified sustainable by the Alaska Responsible Fisheries Management program.

WILD-CAUGHT MAHI MAHI

Our Mahi Mahi is wild-caught off the coast of Peru and Ecuador from responsible fisheries working toward their Marine Stewardship Council certification.

ECO-FRIENDLY PRACTICES

We do our part in protecting our environment for generations to come. We proudly use compostable and biodegradable to-go containers, salad bowls made from rPET, and Sustainable Forestry Initiative Certified paper cups.
