Eggs are the only essential ingredient you need for a frittata. Everything else is flexible and based on what you have on hand. Just sauté some onions and any vegetables you like in a large oven-proof skillet. Add beaten eggs to the pan and bake it in a 350° oven for about 20 minutes or until puffed and golden. Pick up a few Rubio’s sides like:

Spread the chips on a sheet pan and top with shredded turkey, black or “no fried” pinto beans, and Mexican street corn. Sprinkle shredded cheddar cheese or crumbled Cotija cheese over everything.
