Ralph Rubio

Not many college students can say they came back from spring break with a hunger to start their own business, but that’s exactly what Ralph Rubio, co-founder of Rubio’s, did more than 30 years ago.

Rubio couldn’t get the bold flavors of the fish tacos he tasted in the Baja Mexico village of San Felipe out of his mind. So in 1983, he opened the first Rubio’s in the San Diego neighborhood of Mission Bay. From those humble beginnings, Rubio has steered company growth into a nearly 200-unit restaurant chain that offers craveable coastal cuisine. Prior Rubio’s founding, Rubio was employed in restaurant management and held various positions at other restaurant chains. Rubio holds a Bachelor’s Degree from San Diego State University and has more than 30 years of experience in the restaurant industry.

Ralph Rubio’s favorite Rubio’s menu item is The Original Fish Taco with picante salsa.

Marc Simon

Marc Simon is Rubio’s President and CEO. Before being named to his current position, Simon led Rubio’s day-to-day operations as Chief Operating Officer.

Prior to joining Rubio’s, Simon served as CEO for America’s Incredible Pizza Company, Vice President for Corporate Development at McDonald’s Corporation and Corporate Secretary and Regional Director for Chipotle Mexican Grill. Preceding his time at McDonald’s Corporation, Simon spent 17 years with Ernst & Young’s consulting arm, where he focused on strategic issues across the restaurant, distribution, manufacturing and service industries. Simon holds two Master’s Degrees from Case Western Reserve University and a Bachelor’s Degree from Ohio University.

Marc Simon’s favorite menu offerings include the Blackened Tilapia Soup, the Orange Chipotle Salad with Grilled Tilapia, the pan-seared Salsa Verde Tacos and Rubio’s fruit-infused Sangria.
